Ingredients
- For the Peach Filling:
- 6 cups fresh peaches (peeled and sliced) 🍑
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch (optional for thickening)
- For the Cobbler Topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 cup unsalted butter (melted) 🧈
- 1 teaspoon vanilla extract
Directions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Peach Filling:
- In a large bowl, combine the sliced peaches, 1 cup of sugar, vanilla extract, lemon juice, ground cinnamon, and cornstarch (if using).
- Toss until the peaches are well coated. Set aside to marinate for about 10 minutes.
- Make the Cobbler Topping:
- In another bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.

- Assemble the Cobbler:

- Carefully pour the cobbler batter over the peach filling. Do not stir; the batter will rise during baking.
- Bake:
- Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
- Cool and Serve:
- Remove from the oven and let the cobbler cool slightly.
- Serve warm, ideally with a scoop of vanilla ice cream or whipped cream. Enjoy! 🍦
Notes
- For a richer flavor, consider adding a pinch of nutmeg to the peach filling.
- This cobbler is best enjoyed fresh but can be stored in the refrigerator for up to 3 days. Reheat before serving.
