Ingredients:
- Canned Salmon: 2 cans (14.75 ounces each), drained and flaked
- Eggs: 2 large, beaten
- Breadcrumbs: 1 cup (preferably seasoned)
- Green Onion: ΒΌ cup, chopped
- Bell Pepper: Β½ cup, finely diced (any color)
- Garlic: 2 cloves, minced
- Lemon Juice: 1 tablespoon
- Dried Dill: 1 teaspoon (or fresh if available)
- Salt: Β½ teaspoon
- Black Pepper: ΒΌ teaspoon
- Olive Oil: for frying
Directions:
- Prepare the Salmon:
- In a large bowl, combine the drained and flaked salmon with the beaten eggs, breadcrumbs, chopped green onion, diced bell pepper, minced garlic, lemon juice, dried dill, salt, and black pepper. Mix until well combined.
- Form Patties:
- Using your hands, shape the mixture into patties (about 2-3 inches in diameter). You should get approximately 8 patties.
- Heat the Oil:
- In a large skillet, heat a couple of tablespoons of olive oil over medium heat.
- Cook the Patties:
- Once the oil is hot, carefully place the salmon patties in the skillet. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Drain Excess Oil:
- Once cooked, remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
